One-Skillet Pork Tenderloin Recipe

Pork Tenderloin with potatoes and carrots

Pork Tenderloin is an easy meal to fix at the campground. We like to cook it in the iron skillet on the butane cooktop. Most pork tenderloins are sold with two in the package. We cook both and set one aside for pork fried riced cauliflower later in the week.

Pork Tenderloin Roast with Potatoes and Carrots

Easy roast for campsite cooking

Cook the roast in an iron skillet or crockpot – either way it’s great.

Ingredients

  • pork tenderloin
  • yellow potatoes
  • carrots
  • chicken bone broth
  • olive oil
  • Spices to sprinkle on while cooking: garlic, onion, oregano, thyme, rosemary

Directions

  1. Chop potatoes and carrots into bite size pieces; set aside.
  2. Trim silver skin from tenderloins.
  3. Heat iron skillet to medium; add olive oil and tenderloins.
  4. Brown tenderloins on both sides; sprinkle on spices; cook until barely done (about 20 minutes).
  5. Remove one tenderloin; add potatoes and carrots to skillet; pour bone broth into skillet (just enough to see the broth between the potatoes and carrots); cover with lid.
  6. Cook for 30 minutes or until vegetables are tender.
  7. Slice the tenderloin and serve!

After you trim off the silver skin, look for any excess fat that may need trimming also. Brown the first side then flip over and add all the spices to suit your tastebuds!

After the tenderloins have cooked for approximately 20 minutes (or until barely done), set aside one; fill the skillet with the potatoes and carrots and add in the chicken broth. Place a lid on the skillet and cook until the vegetables are tender – about 30 minutes.

Slice the tenderloin and serve piping hot with your favorite bread!
