
Pork tenderloins often come two in a package. We cook both and always have leftovers. Our favorite way to fix the leftovers is with riced cauliflower and vegetables. Pork Fried Riced Cauliflower
Tasty one pan dinner for pork tenderloin
Tip: Use leftover pork tenderloin.
Ingredients
- 1 cooked pork tenderloin
- 1 package frozen mixed vegetables
- 1 package frozen riced cauliflower
- garlic powder
- black pepper
- soy sauce
- olive oil
Directions
- chop pork tenderloin into bite sized pieces; set aside
- heat iron skillet to medium; add olive oil to cover bottom; pour in frozen vegetables; sprinkle with garlic and pepper
- stir fry for about 10 minutes until vegetables are hot and crunchy
- add pork; stir fry until hot
- add soy sauce to taste and serve!



This recipe is great with any leftover meat. Try it with chicken, sirloin, or ground turkey. Also, it’s convenient on a road trip with leftovers from home.
