
Need a quick and nutritious recipe that you can fix on the go? Try this delicious cashew chicken bowl with broccoli, brown rice, and quinoa.
The meal can be prepared in one pan and served in bowls for quick and easy prep and cleanup. We use Trader Joe’s sweet chili sauce for this recipe. Soy sauce or Thai ginger sauce also works well.
Cashew Chicken Bowls
Easy one pan meal perfect for a road trip
Cut the cook time in half with a rotisserie chicken.
Ingredients
- 2 chicken breasts (or 4 thighs)
- 2 cups of broccoli florets (fresh or frozen)
- 1 package 90 second quinoa and brown rice mix
- 1 cup of cashews
- garlic
- olive oil or avocado oil
- Trader Joe’s sweet chili sauce
- salt and pepper to taste
Directions
- Heat skillet to medium, add a little oil then the chicken breasts. Season with garlic, salt, and pepper.
- Cook until brown, flip over, season again, cook until no longer pink inside but still juicy (approx. 7 minutes per side).
- Remove chicken from pan, replace with broccoli, add a little water, cover and cook on simmer until tender (approx. 5-7 minutes).
- Remove broccoli and replace with quinoa/rice mix. Stir fry until hot (approx. 5 minutes).
- Add cashews and stir fry until cashews are slightly roasted (approx. 5 minutes).
- Serve in bowls with sweet chili sauce.

For this recipe, we like to use our butane cooktop. It’s great for one-pan stir fry recipes. First, warm a skillet over medium heat, add a small amount of oil and the chicken. Season with garlic, salt, and pepper. As soon as the chicken browns on one side, flip it over and season again. Cook until the chicken is no longer pink inside but still juicy.


Remove the chicken and replace it with the broccoli (same pan). Add a little water to the pan, and simmer the broccoli until tender but still crunchy.


Chop the chicken while the broccoli cooks. Next, remove the broccoli and replace it with the brown rice/quinoa mix. Stir fry the rice for 5-7 minutes until hot. Add the chicken and broccoli back into the skillet with the rice. Finally, stir in the cashews. Stir fry until the cashews are warm and slightly roasted. Serve in bowls with sweet chili sauce. Yum!
