
You can’t go wrong with this simple summer salad. Cucumbers, peppers, and onions make this salad ideal for a variety of meals. Pictured above with grilled sirloin, it is the perfect side dish.
Simple Summer Salad
Easy to prepare summer salad favorite
Use plenty of basil when preparing this salad.
Ingredients
- 1 large cucumber
- 3 tri-color peppers
- 1 medium sweet onion
- Basil
- Olive oil
- Red wine vinegar
- salt and pepper to taste
Directions
- Chop the cucumber, onion, and peppers into bite size pieces
- Add chopped vegetables to a large bowl in layers; sprinkle each layer with plenty of basil.
- Add oil and vinegar; toss well
- Add salt and pepper to taste; toss well
- Serve immediately or let set in the refrigator – this salad gets better with time to marinate!
Start with fresh cucumbers, peppers, and onion.

Chop all vegetables into bite size pieces. Add to a large bowl in layers. Generously sprinkle each layer with basil.



Toss the salad with oil and vinegar. Add salt and pepper to taste. Serve immediately or let set in the refrigerator – it gets better as it marinates!
