
Looking for a hearty breakfast at the campsite? How about cheesy breakfast quesadillas? We like to cook this recipe using two iron skillets – one regular and one flat. If you have a Blackstone griddle, this recipe works even better!
Breakfast Quesadillas
Best cooked in an iron skillet or griddle
Ingredients
- 4 eggs
- 1 bell pepper
- 1 small sweet onion
- 1 cup cheddar cheese (or your favorite cheese)
- 4 large tortillas
- Sour cream
- Salsa
- Olive oil
- Butter
- Salt and pepper
Directions
- Grate cheese, chop onion and pepper; set aside
- Heat iron skillet to medium; add olive oil to barely cover the bottom.
- Saute onions and peppers; beat eggs with a fork or whisk until frothy.
- Add eggs to onions and peppers; cook until done.
- Set eggs aside (in iron skillet to keep warm).
- Heat iron griddle to medium; add butter to cover bottom.
- Place tortilla on griddle, add egg mixture; cover with cheese.
- Cook until tortilla is golden brown on the bottom; flip in half on the griddle. (note: add sour cream and salsa either on top or in the quesadilla before flipping).
- Repeat steps 1-8 for the remaining tortillas. Enjoy!!
Cook the onions and peppers until slightly crunchy.


Beat the eggs and add all at once to the skillet. Cook until fluffy and done,


Leave the eggs in the skillet and set aside. Add butter to the flat skillet then add a tortilla. As it cooks, divide the egg mixture into four servings. Place one serving on the tortilla and add cheese on top. Cook until the tortilla is brown on the bottom. Flip half the tortilla over on the eggs and the first one is done. Repeat for the remaining servings.


Slice in half and serve with sour cream and salsa. Enjoy!
