Chicken and rice bowls are quick and easy to fix with leftover chicken and a package of frozen rice. The choice of vegetables to add in to the basic recipe are endless. This version features sprouts and green onions for a little bit of extra crunch.

Chicken and Rice Bowls
Easy one pan meal perfect for a road trip
Quick and easy method: use left over chicken or pick up a rotisserie chicken.
Ingredients
- 2 Cups Diced Chicken
- 1 Package Frozen Rice (try Trader Joe’s)
- Sprouts
- Green Onion
- Olive Oil
- Soy Sauce or Peanut Sauce
Directions
- Heat a skillet to medium, add olive oil to cover the bottom of the pan, add frozen rice, stir until rice is thawed (about 5 minutes), add diced chicken, stir until chicken is warm (about 3 minutes), add diced green onion and sprouts, stir until warm but still crunchy (about 2 minutes).
- Remove from heat and add soy sauce or peanut sauce.
- Enjoy!
