Easy One-Pan Chicken and Rice with Veggies

Chicken and rice bowls are quick and easy to fix with leftover chicken and a package of frozen rice. The choice of vegetables to add in to the basic recipe are endless. This version features sprouts and green onions for a little bit of extra crunch.

Chicken and Rice Bowls

Easy one pan meal perfect for a road trip

Quick and easy method: use left over chicken or pick up a rotisserie chicken.

Ingredients

  • 2 Cups Diced Chicken
  • 1 Package Frozen Rice (try Trader Joe’s)
  • Sprouts
  • Green Onion
  • Olive Oil
  • Soy Sauce or Peanut Sauce

Directions

  1. Heat a skillet to medium, add olive oil to cover the bottom of the pan, add frozen rice, stir until rice is thawed (about 5 minutes), add diced chicken, stir until chicken is warm (about 3 minutes), add diced green onion and sprouts, stir until warm but still crunchy (about 2 minutes).
  2. Remove from heat and add soy sauce or peanut sauce.
  3. Enjoy!

Trader Joe’s rice is our favorite frozen rice. It’s easy to cook in the skillet and adds a nutty flavor.
