Hardy Potato Soup
Ultimate comfort food for the campsite
The secret to this recipe is the broth. Use a high quality sipping bone broth for the best flavor. We like Kirkland’s Organic Chicken Sipping Bone Broth. It has great flavor, protein, and low sodium.
Ingredients
- 2-3 lbs red potatoes
- 1 medium sweet onion
- 4-5 medium carrots
- 1 bunch of celery
- 1+ carton of bone broth (Try Kirkland)
- 1 cup of milk (try fat-free)
- 1 TBL flour
- 1 TBL garlic powder
- 1-2 TBL parsley
- cheddar cheese for topping
- salt and pepper to taste
Directions
- Start campfire 30 minutes before you plan to cook to give the wood time to turn into hot coals.
- Wash and chop potatoes, carrots, and celery; dice onions.
- When coals are red, place a dutch oven about 6-8 inches above the coals. Add onions; saute in a little olive oil until translucent.
- Add potatoes, carrots, celery, and spices to the pot. Pour enough chicken broth over the vegetables to cover completely (1 to 1.5 cartons of broth depending on the amount of potatoes you use).
- Cover and allow to cook at a simmer for 15-20 minutes until the vegetables start to become fork tender.
- Mix flour in a cup of milk. Add to simmering soup while stirring constantly. Let simmer for 5 to 10 more minutes until broth starts to thicken.
- Remove from heat and serve with a topping of shredded cheese!
