Pumpkin Pancakes with Pecans

Cook these at the campsite for a taste of the holidays!


Tip: Mix the dry goods at home before you leave for camp.

Ingredients

    Batter:
  • 1 Cup whole wheat flour
  • 1 TBL baking powder
  • 1 tsp cinnamon
  • 1 TBL maple syrup
  • 3/4 Cup +/- milk (adjust to desired thickness)
  • 1/2 Cup pumpkin puree
  • 1 egg
  • tsp vanilla extract
  • Topping:
  • pecan pieces
  • maple syrup

Directions

  1. Mix all ingredients for the batter (use more milk for thinner pancakes or less for thicker); set aside.
  2. Heat iron skillet to medium; add a little butter or oil.
  3. Drop batter in skillet; wait for bubbles to appear on the surface (see pic below); flip; cook until brown on the other side.
  4. While pancakes are browning, add pecans to the skillet for the last minute.
  5. Plate and serve with maple syrup 🙂 yum!
