Pumpkin Pancakes with Pecans
Cook these at the campsite for a taste of the holidays!
Tip: Mix the dry goods at home before you leave for camp.
Ingredients
- Batter:
- 1 Cup whole wheat flour
- 1 TBL baking powder
- 1 tsp cinnamon
- 1 TBL maple syrup
- 3/4 Cup +/- milk (adjust to desired thickness)
- 1/2 Cup pumpkin puree
- 1 egg
- tsp vanilla extract Topping:
- pecan pieces
- maple syrup
Directions
- Mix all ingredients for the batter (use more milk for thinner pancakes or less for thicker); set aside.
- Heat iron skillet to medium; add a little butter or oil.
- Drop batter in skillet; wait for bubbles to appear on the surface (see pic below); flip; cook until brown on the other side.
- While pancakes are browning, add pecans to the skillet for the last minute.
- Plate and serve with maple syrup 🙂 yum!
