Potato Medallions

Potato side dish for any camping meal! Very easy to cook on a road trip. The only equipment you need is a simple camping stove and a skillet. This basic recipe can be seasoned to your taste buds – try oregano, rosemary, or Parmesan cheese. Or dip in ketchup – anything goes well with potato medallions 🙂 .

Quick way to fix potatoes on a road trip.


Tip: Prep the potatoes before you leave home. They will last up to 3 days in the cooler/refrigerator.

Ingredients

  • 2 large yellow potatoes
  • onion powder
  • garlic powder
  • parsley
  • butter
  • salt and pepper to taste

Directions

  1. At home before you leave: bake potatoes in the microwave until slightly done (about 2-3 minutes on each side depending on the watts of the microwave). Pack in the cooler or refrigerator until you are ready to cook.
  2. Heat iron skillet to medium. Slice cold potatoes in thin rounds.
  3. Add butter to warmed skillet; place potato medallions in skillet; season with onion and garlic powder; salt and pepper to taste.
  4. Cook until brown, flip over and repeat step 3.
  5. Season with parsley and enjoy!
